Know Nippon is a seminar series by MPKEN that explores Japan through the eyes of its younger generation.
In each session, Japanese high school and university students research and present topics related to Japanese history, culture, society, and everyday life - in English.
The series offers participants from Japan and around the world an opportunity to discover Japan from the perspective of young Japanese people.
For our December session of Know Nippon, we will explore the fascinating history of sushi, from its origins as a method of preserving fish to its transformation into one of Japan’s most beloved foods around the world.
“The History of Sushi: From Preserved Fish to a Global Food” will trace how sushi evolved through different periods of Japanese history, looking at the origins of fermented fish, the development of rice-based sushi, and the emergence of the forms we recognize today.
We will explore how preservation techniques, rice, fermentation, geography, and changing eating habits shaped sushi over time, and how it gradually moved from a practical method of food preservation to a distinctive part of Japanese cuisine.
Finally, we will look at how sushi spread beyond Japan and became a global food, while considering what has changed, and what has remained through its long history.
